You can search for DIY ways to make both, but I have a food dehydrator and use it to make and preserve all kinds of stuff. Mine's old but very reliable and I dry herbs, every veggie you can think of, like kale for using in the off season, and yes...zucchini too. 🤭

Tomato leather is the same as an apple roll up. Basically any veggie or fruit that can be cooked down and pureed can make a leather or fruit. Tomato leather is actually very tasty. And I'm like you...not a huge fan of just fresh sliced tomatoes because I prefer my tomatoes cooked, but I will chew on tomato leather. It's also great to put into a pot of water and simmer until melted to make tomato sauce.

I used to have a very small house and dried foods only need a quarter of the storage than canned foods do, so part of my drying started out of necessity.
I need a dehydrator because I have a ton of herbs and fruits. I will get one soon. I want it to make jerky because my youngest is obsessed with it.

Probably one of the BEST investments I have made when it comes to foody items. You can have my air fryer, waffle maker, and my stand mixer (shh....don't tell her I said that) but please...do not take my Excalibur!! I'm not a prepper, I just hate to throw away fresh foods when the garden goes bonkers, and I'm so glad too! Dehydrated food keeps a lot longer than canned and we will never go hungry! I've been using the dried foods all through this quarantine and we have been eating very well despite only going out for actual groceries (cold items) once since early March.

No idea how it would react... I’ll try it sometime maybe. Then use vegan cheese.

I’m nervous about attempting these fritters lol
Nah - no need to be nervous. If they don't turn out, feed the evidence to the biddies! What fritters?

How do you store the dehydrated stuff?

Corn zucchini fritters I’m making for dinner. Making bbq chicken wings for everyone and I’m going to eat salad with homemade balsamic vinaigrette and fritters on the side.

My husband said they sounded good

Mason jars. Same as the canned foods, but a whole lot more fits into one jar. Some items I will freeze, like dried eggs because they keep better, or if I have questions as to how dry I actually got it, but mostly in jars big and small.
I have some used books with everything one needs to know, like optimal moisture content, for perfectly dried foods. Also have a few with recipes for nothing but how to re-plump and cook with dried foods.
I had planned to learn to make jerky and even turkey jerky, but never got around to it yet.
