I use seedlings from 6-packs or 4" pots for the most part because they don't disappear in a single bite. They still get worked over fairly well but by the time the cotyledon and/or the first leaves begin to disappear a newer, larger set of true leaves grows in and the plant can survive and then go on to thrive.

I don't have grow lights or any place for them so seedlings or the type of seeds that come up hardy when sown in the ground like corn and beans are what I have to rely on.
You don’t have a sunny window or anything? I’ve never needed or used a grow light. Just a window. Grow light probably would have been helpful so the plants wouldn’t grow all crooked but they grew fine. :)

I'm bummed my incubator is still delayed in shipping. All I have to eat chicken wise is my layers and single roo, which I need to keep. Thankfully I have some meat in the freezer for now.
We are so lucky. So so lucky! Our grocery store had a big buy one get one sale on meat right before the shtf and it's my habit to stock up when they have those sales. Soup, stew, pot pies and sandwiches have helped me stretch it a long way.
