Oyster shell grit is to give them extra calcium, which they may need as they lay. Some mix it in with the feed, others offer it free-choice. I only add it in the feed when I find thin-shelled eggs being left in the nest boxes. I also occasionally crunch up dried egg shells and mix it in the feed.
