im really proud of myself!! i did 3 cornish cross today! they are really HUGE lol at 6 weeks old they are around 6-9 pounds each... i cant believe how easy it was ... i doubt it would have been so easy if i hadnt read about butchering on here!!! we will be doing more tonite after my kids go to bed.. ill get pics then, so you all can see my art work lol. we also opted to skin them. i am very surprised that i actually did it. the first one took me a while to do, ( and i accidently cut the crop oops. but the others went smoothly! thanks for all the advice!
 
By tossing the skin, one looses half of the mointure and flavor inherent to the chicken.
 
i did 3 more today and planning to do another 3 or 4 tonite.. we will see!

i will try plucking with a few.. but skinning went lots quicker and smoother than plucking ( at least from what i remember from helping grampa do his years ago!)

I've never found a flavor difference. You can loose moisture when you cook, so generally frying a skinned bird doesn't go over so well. However, for soups, casseroles, crock pot dinners, etc... they are fine. If you put a skinned on in an oven bag and then roast, they will stay tender and juicy. My experience anyway...
 
we never skin, it may take a little longer but its worth the extra time,
the differnce is unbelievable
