If anyone who bakes in here wouldnt mind directing me on baking I would really appreciate it, I would like to avoid metal tins.

I have a hard time with the natural leaven, but a yeast bread is pretty easy. I have my grandmother's recipe for a slightly sweet white bread. I think the sugar helps it raise. And because it's made with white flour and package yeast, it is easier to knead. In fact, I often will knead it in the KitchenAide mixer.
