i have took so much from this forum i want to give some think back. it as took me years to perfect this curry the taste is amazing you can really taste all the flavors.
the way the meat is cooked it is so juicy and tender.

please share your curry recipes here!

my curry that i love the most.

my south indian meat garlic curry

base sauce.
3 tbsp vegetable oil
3 cloves of garlic greated
2cm x 2cm cube of ginger greated
1 large onion chopped small
1 large chilli chopped

put all in pan and cook till onions are soft.
....................................................
then add.

1/2 tin tomatoes
300ml water
1 tsp tomato paste
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp salt
cook for 10 minutes then blitz till smooth leave to cool.
....................................................

To cook your meat put in a pan.

8 tbsp oil
1 tsp turmeric
3 tbsp base sauce
1/4 tsp cilli
1 tsp garam masala

Cook on a medium heat till browned slightly about 5 minutes now add your meat.
if using dice chicken cook for 20 minutes covered.
if using dice lamb or beef cook for 35 minutes covered.

in a clean pan put.

8 tbsp veg oil
2 chopped onions
1 fresh chilli chopped
5 cloves of garlic sliced
cook on low heat till onions are soft.
then add.

base sauce all of it.
1/2 tsp salt
1 tsp hot chilli powder (more if you like it realy hot)
2 to 4 tomatoes quartered
cooked meat.
cook on medium heat for 10 minutes stir once.

now add
1 tsp garam masala
1 tsp cummin
1/2 tsp ground coriander
1/2 tsp fenugreek
cook on medium heat for 4 minutes do not stir remove the oil that comes to the top if you want.
now add 1 tbsp fresh chopped coriander stir and serve.
