Easy Nachos:

Diced cooked chicken breast (or steak)

Rico's Nacho Cheese cups (Walmart sells 4 single serving packs cheap) They're not spicy.

Tortilla chips of your choice
Pico/salsa

* Warm up the chicken bites.
* Pull the lid off the cheese cup and nuke for 20 sec. stir., nuke 20 more sec. (the lid is foil, don't microwave with the lid on)
* Arrange tortilla chips on a plate. spoon or pour cheese on chips. sprinkle on chicken. Add more layers on top if you want. add pico/salsa/other toppings
* Eat.

Far superior to sprinkling cheese on chips and toasting or microwaving. 5 min of prep if you have precooked meat. add 10 more if you are making it fresh.

Have you ever thought of making your own yogurt? It's easy and simple. I've been making ours for years and years. I drain it to make it thicker and sometimes drain it for a day+ and have the consistency of cream cheese (make a cheese ball with your own ingredients).

I LOVE meatloaf LOL I thought I liked pasta but now I’m meh on it. I think it depends on the kind cause the Cajun chicken pasta from Chilis I wolf down LOL it’s like a cream sauce and slightly spicy lol but plain spaghetti I’m like ehhh. Anyways, love meatloaf. Love cheesesteaks. Love smash burgers or any burgers really lol oh and grilled cheeses are great too but that’s really simple LOL I’m trying to expand my horizons a bit. Maybe I could make nachos?

I have thought about it but always thought it was very difficult lol if it is not then maybe I will try it!!!!!!!!!!!!!!! Thanks!!!!!!!!!!

Have you ever thought of making your own yogurt? It's easy and simple. I've been making ours for years and years. I drain it to make it thicker and sometimes drain it for a day+ and have the consistency of cream cheese (make a cheese ball with your own ingredients).
I've done that. Fermented yogurt and drained it through a coffee filter in a strainer for half a day. It did taste very close to cream cheese.

And it's easy to make. Heat the milk, cool it to around 115-120 degrees and whisk in the starter (about 1/4 cup of yogurt from the last batch). I put two quart or one half gallon containers in a small 6-pack cooler filled with hot tap water from the sink. My hot water is 118 degrees so it's perfect. I change the water a few time during the day to keep the temp where it needs to be and cover the cooler with a few big bath towels to hold in the heat.

Cooking my last bag of frozen kale greens today. I have loads ready to pick in the garden and it's time to start freezing for the upcoming year.
 
Oh and I love anything potato related LOL
Well, instead of pasta, use a potato.
Wash a larger potato and cook most of the way in microwave.

Do a red sauce (any jar pasta/spagetti sauce on sale!). First saute onions for a few minutes in olive oil, then add veggies of choice in order of how dense they are. Ex. you would add sliced carrots (can add a bit of natural sweetness) Before you would add a zucchini type (cooks in 3 min). Add sliced/diced garlic if desired, or just powder. When veggies are almost done, add red sauce and spices and cook on low until all heated. Top w cheese at the end, turn off heat put lid on, to melt the cheese. If you don't have a lid, use a plate :).
Heat the potato to finish, cut open and top with your red sauce veggie mixture. Add more cheese if desired, we really like cheese.
Golly you can use any veggies (even kale, spinach, chard etc) and spice as you like. A little hot pepper, the sky is the limit.

You can also cook some ground beef and add that. Many times I purposely cook double/triple the amount of ground beef and then package it to freeze, so I have a portion ready w/o having to cook it. I just under cook it a little.

I do the same but will also put it in a warm oven with a couple of warm bath towels. I will after a few hours, lightly turn the oven on for 1-2 min then off, just to keep the heat about 110-115.
We bought my brother an Instant Pot with a yogurt setting, last year, which he never uses. So traded him some fresh eggs and raw milk for it. We received the Deal. I have since been using it for the yogurt.

Have you ever dehydrated Kale, Chard etc.? The re-hydrate wonderfully and don't take up our valuable freezer space.

We also powder it and add a little 1/4 tsp or less, to our dogs food as we don't feed kibble but raw.
