It is quite a bit easier to gut them before you hang them though ( and better for eating purposes )....not meaning to critisize .
Good job on putting meat in the freezer....my mother makes great jerky just with store bought mixes and her dehydrater if you want to save money...do it yourself !
Down here in the south, we don't usually gut in the field. There are some that do, but most of the time we take the kill home and gut it or to the processor (which is called the Deer Cooler here) to have it done.
