Warn up in a 2inch cast iron pan:
Olive oil & or butter
2 chopped up onions
2 cloves of garlic
Cook on medium heat for about 5-8 minutes
Layer & Add:
- reduce fire to low-
thinly sliced yellow squash
6-8 med size eggs
Bite size steamed or cooked potatoes..
Then add a generous amount of your favorite cheese
So you can not see the potatoes..
Cook for 15-20 minutes on low not covered
Check to make sure you're eggs are almost done
Then put the lid on for another 10-15 min
Remove from heat & let stand for 10 minutes
Untill the cheese is completely melted
When beating the eggs add 1 Table spoon of
Milk or H20
Salt & season to taste
Garnish
Sour cream
Salsa
Fresh organic sliced up & season tomatoes
