Just make sure you get the right one. Found a wonderful article on it:This has been very stressful. First major issue in 3 years. Chop up an onion as small as you can get it and smash out the juices as best you can.
Put Martha White Self Rising Corn Mean in a bowl.
Add Sugar. (Say 1/3 bag of cornmeal to 1 cup sugar)
Mix thoroughly.
Add enough buttermilk and the onions to barely wet it.
Use your hands to knead it. It will get wetter as you go. Remember you can always add more buttermilk, but you cant take it away.
When its ready it will still be a little gritty. Cover the bowl with saran wrap. If you have time, set it in the fridge for 6 hours or more. You want it to rise. If you forgot, set it on the counter and let it rise as long as you can. The longer up to a day or so is the best in the fridge.
Use a fry daddy or equal. Heat it to 350 or in that range. wet a small spoon in the grease and dip into the bowl and make a ball with the spoon and drop it in the grease. Wet spoon with the hot grease each time. Make ball and repeat. It will drop to the bottom and rise. In a fry daddy I ususally make 8 or so at a time. After it has risen watch for browning of the edges. A lot of the time, it will roll over on its on. If it doesn't, gently tap one side and it will roll over and the browned side will be on top and the uncooked side will be on the bottom. Good luck
