Dinner for one?

You can freeze milk into useable amounts. Just let it thaw almost completley before you use it. Same with butter or margarine.

The sinful looking cake in a cup recipe recently posted here is really neat sounding if you live alone.

You can make soup, chili, etc in large amounts then heat to boiling and pour into canning jars, seal (good used lids can be used as long as they seal) and refridgerate and use within a few weeks. (You can fill part way, skip the seal and freeze but some ingredients or cream type soups may not do well.) Since it is not pressure canned it is not shelf worthy but by sealing and then refrigerating you can keep it longer than unsealed.

Home made rolls can be frozen in individual serving sizes. Pizza crusts can be made or bought for individual pizza.

I know this will freak some folks and I have not tried it but according to a recent article in CountrySide magazine you can make a cake and bake it in a large mouth canning jar (fill it 1/2 full). When it is done, immediately put a lid and ring on jar and seal it. She said it keeps well on a shelf like any other canned food.

A simple frittata or the "farmer's breakfast" is good for dinner:

for a frittata, saute some onion, broccoli or squash, bell peppers, asparagus - any vegetables that you like, using an oven safe skillet, season with s&p, cook until tender, then beat a couple of eggs, pour over the vegetables, top with some cheese and put under the broiler until the eggs are set and the cheese melted

a farmer's breakfast is cooked all in one skillet; cook some onions and potatoes until done, top with some cooked, crumbled bacon, then add in one or two beaten eggs, scramble it all, top with grated cheese and let it melt a minute, serve up hot.

Other ideas:

~ cheddar bratwurst cut into chunks in heated skillet, add chopped sweet onion into large chunks, then 4-5 Yukon gold or red potatoes into large chunks, leave skin on, then cut cup a peeled carrot or two. Next, cut up a green pepper in large chunks and a yellow squash or zucchini. Add season salt and let cook all together till veggies are done.

~ Salmon Kedgeree – saute some chopped onion in butter in a saucepan, add a small can or pouch of salmon, 2 HB eggs (chopped), curry powder, cooked rice (1 cup at least), frozen peas, and a little water; heat with lid on pan until all is hot and peas are cooked.

~ Greek Chicken & Zucchini – chicken thighs and sliced zucchini in a greased baking dish, drizzle with lemon juice, olive oil, crushed garlic, oregano; bake at 350-375 for 45 minutes or until chicken juices run clear.

Crapy time of year for that. i lived alone form 16 -21 the best years of my life. My fav, thing to do, this would be weekly, when I was in school... Sunday, roast or whole chicken, freeze a bit of the meat in your gravey or just even jucies from meat. (just one or two little baggies) I'm guess, being a college student you have no big deep freezer...

put wraps on your grocery list, and freeze..

So Sunday was roast right, plus you put a bit of extra meat in freeze in two baggies...
Monday, left overs, if you have a crock put, in AM I would make a soup, put in crock well at school for day.. yummy homemade soup...
Freeze two potrions of soup
Tues- Stir Fry left over meat

Wed, fatgis or wraps whatever you like, Just take your one extra baggies of meat in frezzer add to veggies volia! (Make sure those wraps go back in freezer)
Thursday... one of your freezer soups... (maybe get a homemade bun at school caf.
Friday, Home made pizza, boughten crust, fresh veggies, pull out whatever your protein was for the week...

Sunday roast.... of something else, preferable whatever is on sale... On Saterdays AM, I go through flrys, then decide which grocery store will save me the most money that week.. Sometimes I hit a few groceries stores, but always in a certian order.. As you don't want to waste time, and or gas/buss slips!

You will find after a month or so of doing something similar every week, that eventually you have a few different kinds of meats/soups in freezer, ready to go.. So then you can mix and match your weeks not to get too bored..

i highly reccomend a crock pot, this will do your roast if you can't be home all day on Sunday or chicken or whatever was on SALE...

then your soup, i'm kind've hooked on egg noodles in my crop pot soup.. I add those when I first get home after school/work
So they don't get mushy...
