I love "Scotch" eggs tho we call em' IRISH eggs at my house.This sounds so yummy, got to pick up some pan sausage.
Scotch Eggs: Make Medium-Boiled Eggs ; peel. Pat bulk sausage around each egg to encase it. Roll in flour, dip in beaten eggs, then roll in panko. Shallow-fry in vegetable oil, turning, until crisp.
