@Beer can , I make Kale Salad about once a month when I can get good fresh Kale

. Here is the basic recipe for it. Measurements are approximate due to the fact that I just throw it together.

Kale Salad:
Wash off a large bowl of kale. Drain and Pat dry. Remove stems and hard pieces from kale.
Squeeze one half lemon over kale. Let sit. (The lemon juice will soften up the kale.)
In a small bowl, mix 2 T olive oil, 2 T chili powder, 1/2 t salt. Drizzle over top of kale. Toss and serve.

DH was not a fan of kale, in fact he told me he hated it. I made this salad one night for dinner & he asked me what the greens were. Said they were delicious! When I told him it was kale, he didn't believe me. LOL!


@perchie.girl , How's the weight loss going? Last week I started a walking program. Got a pedometer and everything! Suppose to walk 20 miles a week & I record my steps (&/or miles). This morning my cousin and I meet and we will be walking 4 miles. Then later today I will walk another mile. I will be over 20 miles this week!

Don't think I've lost any weight yet, (clothes don't feel like it) but I've been watching what I eat and making more educated decisions on that end as well. I did a similar program about 5 years ago and took off 30 lbs. Unfortunately, I didn't keep it up.

Yesterday I got a free dog house off CL! GO ME! It's huge. Stands 5' at the top. It is in good shape and VERY HEAVY too. Took my son, hubby and brother (all three) to get it loaded and unloaded. Going to convert it to a chicken house, put fence around it, a nest box on the side, door on the front, and put some of my select breeders in there

For quiche we always do it without a crust... And I don't follow a recipe... I just crack all of the eggs in my "old egg bin" until it is empty, add salt, pepper, and garlic powder until it looks good... Dump in a bunch of grated cheese.

I use a 9x12 glass pan, melt a bunch of butter in it... If I had something to add to it (like frozen spinach, or sautéed onions, or sausage, or whatever, then great) then I add that, and dump the entire bunch of goodness into the glass pan and cook it in the oven until it is done.


Other things I do when I have a bunch of eggs...

Flourless chocolate cake
Chocolate soufflé
Do you ever make puddings?


I make rice pudding and tapioca pudding on occasion, I am not sure about the last time I made a "regular" pudding. I like pie though... Custard pies.

My kid #3 can now make a good chess pie, YUMM!!
 
Stayed up last night/this morning to see the supermoon lunar eclipse.

We had a nice view from the back deck and it was nice outside. But now, my head is foggy, I need coffee and I've gotta find work clothes. You all have a great day!
 
I dont know about dieting, I would think eggs would be a great diet food.
I loved the rice raisin pudding my daddy made with the milk he used to buy from the dairy man who delivered with his old car. A mennonite man named Yoder. .
No eggs in it but I loved his French apple pies.
Loved my mom's German Chocolate cake, A great way to use a dozen eggs. With 5 kids, eggs were a staple. Back then everyone's were free range and supplemented with cracked corn and worm farms. My mom made the best fried chicken all winter long... If they did not lay...

Hoop coop/tractor bachelor pen idea scrapped. Built a 4x8 mini coop/breeding pen instead. Just have to finish roof which will be removable so the coop will be easier to move. I've had a roll of 4' by 100' welded wire I decided to make use of for a run. Bought 7'x100' bird netting from lowes to keep the darn hawks out, cut in half doubled up with zipties they should have around a 14x50' run. Plan is to move it around where I'm expanding our garden area. By next yr planting time I'm hoping they have about a 100'x100' area scratched and pecked to bare ground and fertilized. Should be a lot easier to rototill. All the white jersey giants I'm keeping will be going into it, will free up space in the big coop so nobody is overcrowded this winter.

Sounds like a plan! My son is trying to come up with good coop plans for my chickens. He keeps sending me pics that are cute little coops. I keep reminding him that I have over 100 chickens
