If we get rabbits, they're going to be a purely outside thing, meaning they will only be kept in the summer. We don't have the space to keep them in winter. So they would be down to zero some time in fall, I think he'd notice...

Neither of us wants them inside, this place is too small and I think the dachshund would go crazy with rabbits inside

no no, outside rabbit hutch. My neighbours growing up in Germany had 4 stalls in a small shed. The back wall had the cages which left you the front half to walk around in and store feed. Sadly the kids "forgot" to feed the rabbits and guinea pigs often enough that they went cannibalistic but that is a different story... In the shed/rabbit hutch the water didn't even freeze.

Might work in Germany, but we easily get similar weather to what you have there, so too cold for winter. Bunnies do okay in the wild, but I wouldn't want to keep them in a unheated hutch through the winter.

Butchering bunnies is much harder than chickens. I'm OK with hunting them though. Always wanted to raise Flemish Giants rabbits.
@Outpost JWB I have Brown Leghorns for the white eggs, I like them, pretty birds, just don't expect to catch them when they are loose their like road runners. I'm going to get rose comb ones next time, those big floppy combs look like frostbite catchers.

Beer, why would bunnies be hard to butcher? Skinning is much less work than plucking. I haven't actually tried skinning a bunny yet, but I don't see what would make it more difficult. The rest of the anatomy is pretty similar.
