oh, you mean the increased altitude?

Yeah, I know that messes stuff up with shipped eggs..... I wonder though, I am at 1,300 feet above sea level... is that high enough to make a difference?
We are 1,600 to 1,800 here, 1,300 doesn't sound that high

I like them 'straight' no one else will eat them, and some store bought chickens do not contain the yummy giblet package. When it does the wife puts it in the fridge and doesn't tell me....I love chicken livers, the heart is great, and I have strong teeth for the gizzard. Dad always ate the neck when I was a kid, he must have been starving cause not much on that Lol!

the neck is PERFECT, I cook it in the pot on a low simmer with bay leaves.....


after many hours all of the meat just falls off the bones, and there is lots... dice it up and put it in corn bread dressing!

YUM!


Now... I am drinking... but I think I am loosing many more braincells watching commercials...

:drool   love beef heart..my favs lamb heart...never had chicken heart


Beef heart is nummy... lamb is more nummy... chicken hearts aren't as rich in flavor as beef, but still really good...

Those altitudes aren't high... I lived at 6,500 for 17 yrs... that sucked ***... never again...

I am having trouble trying to imagine 6,500 feet.

My ears pop going from close to sea level to 1,300... I can't imagine what the body would do having to drive up and down a mountain side like that every day.

Did you have to drive it every day?

Or was there a town way up high there with you?

Now I am thinking... oooooh, maybe Peru... if I had to live that high, Peru might be super cool... I wonder how long their winter is... hummmmmm
 
Colorado Springs, CO... hot and very, very dry... and elevation seems to make people crazy... way crazier than average... pretty to visit, but I do not recommend living there...
