though srprisingly they have Chicken listed as Poult....
Quail fact sheet California Department of Fish and wild life... While not officially designating them as "chicks" they do call them chicks in their literature.

So It would follow that since quail are Galliformes just as Chickens are.... Chick would be the appropriate term... or Quail Chick to be clearer.
