Do I need a rooster for each variety of chickens or only one rooster?

Edit to add: I'd sell them at $5 each, rather than butchering, unless there's a reason that meat from YOUR chickens is much better than store meat for your purposes.
Actually, I do prefer the meat from MY chickens. :) They have more texture and flavor than what you buy in the store. My favorite method lately of cooking them is in my Instant Pot. Even the toughest bird gets nice and tender. Otherwise, I like to can the meat and make bone broth out of the carcass.

If you don't care if you have purebred chicks, keep one rooster. If you want purebred chicks from each variety, not only do you need at least one rooster of each breed/variety but you also must house each separately or for at least 3 weeks before collecting hatching eggs.
