Do you clean eggs you want to eat?

Do you need to refrigerate as soon as you pick them? How many times do you go looking for eggs?

:cafBarbara Kilarski has written in her "keeping Chickens" that if you can not use the egg that is dirty soon then you can wash it with with a damp sponge ;with no detergent, to rub off the dirt, then dry the egg thoroughly with a soft cloth, then rubbing a little cooking oil over the entire egg and wiping away the excess to help replace the natural coating that protects the shell from dirt and bacteria. She recommends this as a last resort as the unbroken shell protects the egg from the dirt on the shell She recommends a dry rub will do the trick.

We clean all my eggs for my customers usually with hot water, using a clean scouring cloth put it in the scalding water and wipe the eggs clean. I dry the egg shells with clean paper towel. If the water gets a bit soiled I dump it and put clean scalding water. We've been selling eggs 3 years now and no gripes from customers. Eggs with superfisual cracks or are excessively dirty are fed back to the hens. Town people are fussy so a little quality control goes a long way for your sales.
