You are in an impossible situation. He feels entitled and you have to bare the brunt of his immaturity. The grandparents are just as much responsible because they do not hold him to any standards and are willing to put their business up as collateral. I would walk out the next time she nips at you and tell them you are going to have the bite evaluated at the clinic. Make them sweat.
Does the dog walk on a leash and does she enjoy walks? I'd take her for a walk at lunch if that's an option.

Since Mr. Entitled doesn't seem to see a problem, maybe you could have a chat with the grandparents and offer some suggestions, like setting up a puppy-playpen? Or a baby-gate to keep her in his cubicle, or maybe baby-gate off some other area where she doesn't have to be tied up but can be confined to her own area away from potential victims?

If you put your complaints in writing, is it possible that the boss and the owners (cc them) will listen? If not, you'll need to either live with it, try to negotiate using a professional, or file suit.

get a can of pepper spray or something similar. you probably wouldnt have to spray it for the dog to smell and keep away.

I worked again yesterday. I filled my pocket with dog training treats before I left the house. As soon as I walked back there she jumped up and quickly noticed the treats in my pocket. I told her to stay "off" and once I was almost out of reach I rewarded her with a treat. It took about 3 times back and forth before the dog caught on to what I wanted. It got to the point yesterday that if I put my hands in my pockets and walked by shed stay on the ground and just look at my pocket. The dog isnt dumb, it just needs consistency. I'm hoping I can get to a point where I dont have to have the treats in my pocket but it seems like this is going to work. Yesterday was far less frustrating I think for me AND the dog because she is finally understanding what I want so she can get what she wants. Its just a shame that I have to train his dog for him. I guess some people just dont understand dogs...but really dogs are easier than humans. You know what you're getting from a dog within 5 minutes whereas a person is like an onion. Oh well, whatever gets me through my work day I guess!

Spraying pepper spray in a closed office is a terrible idea, let alone pretty cruel to do that to a dog that is only seeking attention. Sure, if you were being attacked that would be one thing but this dog is just desperate for my attention and her nipping is more than likely a further reach because her jumping has gotten her nowhere. Either way she needs trained out of it NOW before it gets worse. My boss was shocked at her major 180 yesterday with me using the treats. He said "you're turning my dog into a food junkie" to which I said "Good. She can come to me for her fix and will do exactly as I say." Then I leaned down and pet the dog and said "because thats what a good dog does! Yes it does! Such a good girl!"

Exactly, the poor dog doesn't deserve to be punished just because she's owned by a dumbass. She sounds like a smart dog with a lot of potential, too bad her owner is the opposite.
Better a food junkie than a punishment junkie, which seems like the only type of attention she ever gets from Mr. Entitled.
