What do you know about dough enhancer?

Here is a link for some.....


I have a recipe that calls for it I had not heard of it before. I wonder if this would be good in the gump bread. How do you know how much to use in each recipe?

I have never heard of that before. The first couple of links I don't like, there is a lot of oils and stuff I don't know in there. For the last two I at least know what it is. I am not really sure it's needed, but that's just me.
 
I bake bread for my family, but I do not eat it because I am sensitive to wheat gluten. I use gar gum-which is a bean protein. I think it does a good enough job, it gives some elasticity. Wheat gluten has to make a better bread than other proteins, but the gar gum is another option.
 
yes! Gaur with a 'u'. I purchase it at the health food store. no taste. I also use it to thicken soup and gravies. It gives the amount to use in bread on the label.
