Dual purpose chickens?

What's funny is I'm in the fill crop camp on this/ well, enough to find it and work around. No need to fill but don't want it empty for sure. For me working from neck down I like a little fill of crop to find it, grab it and do what I need to do.

I work the thigh cavity and don't remove anything, work from neck down to cut away the crop and tubes lower then pull all out in one motion.
 
The thing is is if you know what your looking at then it really doesn't matter. If your hacking away bit by bit then yes, by all means have them deprived of food as your smearing it everywhere. Yet, if you know what your doing then it's quick blade work to lossen all the membrane. Grab and remove from hind area. All that white membrane holds things in. Cut that, cut from other end, grab and pull. All entrails should come out. If you did the job of cutting the white membrane each end. Not much poop if you keep it all where it should be, work around it all then pull out. No mess and no fuss.
 
Yep, I consider my processing job to be a "failure" if I have any gut leakage from either end. If one is careful, the nicked guts, or content spillage should be a rare occurrence. I have a friend who won't process chickens b/c he says it's too stinky. However, if the bird is processed without nicking the gut, there is really not much smell.
 
Oh, and try to do it early in the morning, before they've eaten. That way there is less material in the intestines and the crop is empty. My preference is to go out before daylight and catch them off the roost and put in a cage/kennel, that way they aren't getting all excited and being chased around (you don't want that) and you know they haven't eaten.
