duck egg overload

    does anyone have any good duck eggs recipes. They taste to eggy for me to just eat them fried. I tried them in a lemon meriguin pie and the lemon tasted like pure egg. [​IMG] i wont be able to eat one of those for a while. I heard they are good for homemade noodles. thanks for any help.

    Use them in cakes, quiche, custards. Use in meatloaf or anything you need to coat the food with egg before rolling in breading, like fried chicken or chiles rellenos.
    You do need to account for the size when using them in place of chicken eggs or you will get eggy overload.
