Duck eggs can be icky!

That's probably it! I can't really stop them from eating acorns, since they free range in the pasture every day.
I love free range chicken eggs, I mean really free range, not store bought ''free range'' eggs. I can not stand store bought eggs anymore, they are so pale and watery, plus it kills me to support the way those hens are kept. Duck eggs can be good, but acorn duck eggs are not very appealing.

I agree wholeheartedly about fresh eggs from happy birds!

And I recall that cotton seed meal makes the egg yolk dark green, too.

While we have oaks around, no one has eaten very many acorns in one day, or I think we would have noticed. But then, it was not a mast year here. Oh, that could be interesting!

Neat - since you didn't eat it, does anybody know how it changes the taste of the eggs?
We have gobs of oaks around here, but the ducklets so far haven't eaten any of the zillion little acorns around on the ground.

They (duck eggs) are normally thicker than chicken eggs in the fry pan and the best way to cook them (if you don't want to stand there and spoon hot grease over the top of the egg) is to put a cover on right after adding the egg to hold the steam in to cook the the top. Sunny side up doesn't work very well. But that green color that you mention is something I have never heard of or seen! We sold eggs, bpth duck and chicken eggs and the duck eggs were always in big demand. I had customers complain of "muddy" taste but nobody ever said anything about green eggs!

Well, I ate one this morning! I put the lid over it like you suggested and it turned out great. It still had a green yolk, but it tasted awesome!

I should eat those more often!

I don't like the taste of duck eggs, but mine used to be on the pond and they tasted earthy. I have never tasted any that were not on the pond. I have some now, but they are in the hen house but they have not started to lay yet...For baking, they are Great!!

Mine have acces to a large pond, but for the past few days they have been hanging out in the pasture.

I didn't find too much difference between the duck eggs and the chicken eggs, except for texture. I wouldn't cook them sunnyside up or even over easy, but enjoyed them scrambled and in omlets just fine. I don't have my ducks on a pond, just in the yard with a pool, though we do have a creek, they don't go into it. I hardboiled them and used them for egg salad and that was good. Glad the green ones were ok, but I would be kind of weirded out to eat them! LOL SAM I AM
