Just wanted to share, last weekend we made about 30 pounds of Muscovy duck sausage and it came out sooooooooo good

recipe as follows for 10 pounds of meat

10 pounds duck
1/2 cup dry red wine
2 Tablespoon white pepper
2 Tablespoon salt
2 teaspoon mustard seed
1 tespoon black pepper
1 teaspoon sage
1/2 cup finely mixed onion

I also added some allspice, and red pepper for some extra zing.

those look outstanding thank you for sharing the recipe! do you smoke them ever or just cook them fresh and are they pan fried or grilled?

I would love to try this

We don't have a smoke house....yet. That is on the plan for this spring. But they would be good smoked, we just cook them fresh on the grill or sauted in butter is good.
