When is it time to separate mom and ducklings and how do you separate them?

Why do you want to separate? Mom usually takes care of that when she is ready.

No ducklings yet we’re waiting, but I can’t keep them

Then just take up eggs every day.

You can take them away from mom safely after day 1-2. Momma duck will likely be moody and possibly aggressive for the first few days, but she'll soon get over it and start laying again.
