Dumb egg question inside

Duck eggs ARE deeeelicious, especially in baking. I use them the same as chicken eggs, even the big ones. Sometimes if I have a lot of eggs to spare I'll throw in an extra one, especially if the recipe is for a large amount.

Good to know, thanks.. i dunno around here everyone refrigerates there eggs.. chicken or not.. our packages(cartons) say to so i must say i have never thought otherwise. I just saved a large carton from some store bought chicken egg to keep my duck eggs.. and wrote 'duck' on it lol

I have 3 fridges in my house.. so we're not short on storage.

Ooh, yes, baking!

I don't know much about baking, but I make cornbread. And for my cornbread recipe I used to use two chicken eggs and a few tablespoons of vegetable oil. Now I use two duck eggs and don't need the oil. When I want to make pancakes, I substitute an extra duck egg for the oil the recipe calls for.

I like boiled duck eggs because the yolks are so creamy.

And (I have read) duck eggs have so much more B12!

Future plan: try my mom's egg gravy recipe with duck eggs.
