One of my daughters does a side business decorating cakes with me called me at work to have me pick up eggs on my way home. I said to her that there was a carton and a half in my fridge from the girls and she said" I cant use them in the cakes cause they aren't pasturized" After Choked myself laughing i told her that no eggs are pasturized and she still wont use them or eat them. I told her that if it would make her feel better then she could put it " past her eyes before eating it.
I'm not sure it is legal to use farm-fresh eggs in home bakery products in my state (or to sell back-yard eggs to commercial bakers or restaurants). My state's regulations states farm-fresh eggs (meaning eggs that aren't from inspected facilities) can only be sold directly to the end user for personal consumption. Of course every time I call the state to ask about the rules here I get different and contradictory answers ... and I can't exactly follow every egg around to know who eats it ...

AFAIK, the USDA eggs aren't actually inspected anyway. It's just the facilities where they are handled that are inspected to insure that they are being cleaned, packed and stored "safely."
