How can you tell hen from roo and what type of chicks are those

I bought them at the farmers co-op and they had been sexed as day old chicks. They are Easter Egger chickens and a Buff Orpington. I hope to find eggs every afternoon when I get home but still none. I wonder if they wont lay till spring since the days are getting shorter, however I do have a light in the hen house to maybe help a bit.

Finally starting t get some eggs. i have a couple easter eggers laying, my buff is laying, a white leghorn mix (lays a light beige egg) , and 1 of my OE. only 5 hens outta 17 laying so far. The EE with red beard (my favorite) lays a pinkish egg. Hard to tell from the pic tho.
