Keep the coop clean, keep the chickens well "spaced out", and make sure you don't let nest boxes get dirty. Lots of time salmonella are on the outside and get inside, especially after 38 days of storage +commercial washing. Even if an egg has it... if it is fresh, the time the bacteria has to multiply if fresh is low enough there will not be enough in it to make a healthy person sick.
I eat raw eggs... I also eat raw fish.... I've yet to get sick from these things. Shoot, I also eat fruit without washing them and there is probably chicken poop dust on them... Still not sick here.
As long as the shell is not cracked, it should be sterile inside.
Raw egg white is kind of "slimy" but the yolk is very rich in flavor.
