Eating raw eggs...

Keep the coop clean, keep the chickens well "spaced out", and make sure you don't let nest boxes get dirty. Lots of time salmonella are on the outside and get inside, especially after 38 days of storage +commercial washing. Even if an egg has it... if it is fresh, the time the bacteria has to multiply if fresh is low enough there will not be enough in it to make a healthy person sick.

I eat raw eggs... I also eat raw fish.... I've yet to get sick from these things. Shoot, I also eat fruit without washing them and there is probably chicken poop dust on them... Still not sick here.

As long as the shell is not cracked, it should be sterile inside.



Raw egg white is kind of "slimy" but the yolk is very rich in flavor.
 
I wouldn't worry about anything at all. I always eat my eggs with the yolk runny, and I've never had a problem yet. Also, I have known many people who drank what we call "eggnog", which is raw eggs mixed into a glass of milk.

BTW.......I'm living in Thailand, and just as in Japan, many things are eaten raw over here. I don't like the raw liver, but then I don't eat cooked liver either. Let's just say I only eat the outside of animals........only the meat. Liver, kidneys, heart and etc. are just not to my liking.

I quite often eat raw beef here in Thailand. It gets served cut into small pieces and mixed in with various ingredients, some of which I would rather not know about:lol: Raw eggs are also added to noodle dishes and dishes such as rice soup, and like you, I've never been sick from it yet.

I say................enjoy your eggs any way you want

I've also done the raw eggs in ice cream--yum! Now, would I do that with store bought eggs...........I don't think so

Oh, and as for the USDA research...........always remember, they have lobbyists, and their agenda is not your health.
 
It takes just 24 hours to produce an egg, from a sterile body cavity in the chicken.
Unfortunately, it passes through the cloaca, the common hole that chickens have for the passage of poop, urine and reproduction.
It is there that salmonella can get onto an egg surface.
After that it can slowly penetrate the surface and infect the egg.

So if you eat them very fresh your chances of illness are miniscule, not zero, just minuscule.
So go ahead and enjoy Caesar salad, spaghetti carbonara and drippy sunny side up fried eggs.
I really believe that fresh within a day or two will never cause illness.
 
I also eat sunny side up eggs for breakfast every day (even store bought before I got chickens) and I am never sick. I don't usually even get colds or flus either. (knock on wood) I've eaten raw beef, raw fish, rare steaks, rare hamburgers all my life ( will have to try the raw liver, yum) and don't bother washing strawberries and raspberries before eating them either. My husband is a fanatic about well cooked meat and washing everything and he gets sick all the time (tummy upsets, colds and flus) I wonder if eating stuff like that could strengthen the immune system???? Any thoughts on that???

You should be fine with the raw egg if you're accustomed to frequent exposure and practice some common sense. There is never 100% guarantee even with store bought eggs, but generally contamination happens from OUTSIDE the egg.

Some basic culinary precautions can help reduce bacterial load introduced:
- Use a fresh clean egg, cleaner the better. If you decide to wash, make sure it's dry before cracking.
- Do not use the shell to separate the yolk and egg for non washed eggs. The preferred method would be to break it into a bowl, and avoid using the edge of the bowl for breaking as well, just use some other surface. Wash hands then use fingers to whisk out the yolk or use a separator.
- Discretion for Children/Elderly/Supressed Immune System folks is up to your comfort level.
 
Eating a variety of things and some dirt will help your immune system at low levels by just plain giving you exposure. Of course, don't do it too fast, and if you are young/old/compromised, you might not want to risk it, as there is some risk.

My SO when we first met could not eat undercooked beef! He just did not have the enzymes built up in his system to handle unbroken down proteins plus what ever small levels of bacteria was present in the meat. But over time, with less and less well done steak, he can now handle and enjoy a medium cooked slightly bloody chunk of meat with no issues at all! The first few garden strawberries made him sick too, but now he can eat them just fine. He does just have a sensitive stomach though, as he can't drink "raw" water. It's all boiled here.

Who knows. I can drink it just fine along with almost everyone else who drinks it without boiling it. Most of the cooked water here turns into green or ginger tea prior to consumption.
