A hen that lays an egg every day will lay later each day as it takes approximately 26 hours to make and egg. A hen that lays less frequently could lay at about the same time everyday, but they too seem to lay later each day they lay, until it reaches late afternoon, than a hen will wait until the following morning.

X2. Sometimes they go on strike though, like when there's excessive heat, major/sudden change in weather, etc. Also of course when the daylight hours are short.
