Egg Quality

So, my girls are in various stages of moult and out of the 7 hens I'm getting 2 eggs mostly every day. My husband likes over easy fried eggs and now he swears that the yolk breaks away from the white when he cuts into it. Has anyone ever heard of such a thing? I like scrambled eggs and so I don't see any change. Any comments would be appreciated.

Is it noticeably colder where you're at right now? Maybe the eggs are partially freezing before collection?
