Egg question

That's a good idea, counter aging them.

That's what I've heard too, not sure how scientific it is, but one day = 1 week, and fresh eggs are supposed to be good for at least 4 weeks, right? Or 6?

I don't know about whipping them, but I learned how to hardboil fresh eggs from a byc thread awhile back. I do it regularly and it works great.

Bring water to a boil
put eggs in boiling water
boil for 14 minutes
spoon eggs (don't dump them in with the hot water) into the sink or large bowl filled with ice and water.
Peel eggs warm or cold.

It amazed me the first time I tried it. Instead of losing half the darn egg trying to peel them the shells just came offf like magic.

Wow, I just hardboiled 14 eggs (for the chickens to reconsume) this morning and sure enough they got plenty of shell with those runny whites. Thanks for the tip.
