Egg washing

Because of the cuticle or bloom which is the last thing the hen applies to the shell. It is a coating that dries almost immediately sealing the thousands of pores in the shell that when washed allows bacteria to enter and moisture to be lost.
 
When the egg comes out it has whats called a "bloom" which is a coating that is put on the egg right before it comes out. The bloom keeps bacteria from entering the egg. When you wash it the bloom is washed off.
