Eggplant

I bread and fry mine, and then put it in a pyrex dish with Arrabiata sauce, and some mozzarella and ricotta cheese and on top with mozarella and bake it. Like lasagna sort of.
 
I find they are alot like Zucchini they pick up the flavor of whatever they are cooked with.
I add mine to spaghetti sauce or layer it in lasagna. I also add to my stuffed pepper mix in a skillet.


I brown hamburger and onion in a skillet and then add 4 quartered green peppers.and a cubed eggplant and add a jar of spaghetti sauce and a cup of water .Once cooked together I add a cup of instant brown rice turn the fire off and let the rice absorb the hot water with cover on the skillet.
 
I made up a big ol' batch of marinara last night... used it to make calzones and the rest went to the fridge.

Did find an eggplant that looked likely, fresh batch I guess, so tonight we're trying Eggplant Parmesan.

Did the eggplant in the oven, instead of frying, mainly because I'm more experienced with oven than frying.

DH saw the eggplant in hand and said "I haven't had eggplant since the last time you secretly fed it to me." and I said "Huh? I've never cooked an eggplant." to which he replied "Oh well, wanted to cover all my bases." sneaky booger.

Kids are fascinated... what's it taste like? I donno... DS thinks it smells like an apple, DD says more like a banana... in the raw state mind.

Just put the dish in the oven for the last bit of heat/brown.... we'll see how it goes.
