Beat 6 large eggs in a bowl and add 1/4 tsp. sea salt, 1/4 tsp fresh oregano. Set aside. Slice 3 red bell peppers medium thin, saute in olive oil til tender.Turn on low and add eggs,mixing everything around together. when eggs are done, slice the egg pepper mixture so that it will fit on bread.Grill lightly with butter, some focacia bread or garlic bread or a good french bread. Put eggs and peppers between the slices and enjoy.A good "breakfast for dinner" dish with some fresh Italian sausage that is fried with peppers and onions, and fresh fruit side dish.
