I love eggs in a basket (a piece of toast, cooked in a pan with butter/olive oil and a circle cut in the center of the bread. When the bread is toasted crack an egg in the center till whites are set or till desired cookeness). I decided to fancy it up a bit and add Parmesan, ricotta and arugula! Highly recommend!
 
Egg Muffins (Base Recipe)
Makes 12

6-8 whole eggs (depending on what size.)
1/2 C milk or HWC
1/2# meat of choice (eyeballed)
1/2# shredded cheese of choice (eyeballed)
Up to 1 cup chopped veggies of choice (eyeballed)

Beat eggs and milk well. Season. Add in YOUR PERSONAL mix of meat, cheese and/or veggies. Pour into greased 12 cup muffin tin or silicon pan. Bake at 350°F for 30-45 minutes or until done. Serve, or cool and put in the fridge. These can be eaten right out of the fridge.

A LOT of the measurements are gonna be eyeballed, but you don't want to use 12 eggs straight away. The egg is more of a binder to hold the other ingredients together. I'd say the egg makes up 50% of each muffin.

COMBOS WE'VE TRIED AND LOVE

TACO
Leftover seasoned taco meat or chorizo
Mexican cheese shreds
Replace milk with sour cream
top with a dollop of salsa before cooking

Our Regular
Chopped mushrooms and spinach
white cheddar shreds
chopped, cooked breakfast sausage

Vegetable Blend
We usually toss in any combo of chopped raw broccoli, mushrooms, onion, sprouts, etc. The moisture in the muffins cooks the veggies. Bell peppers, zucchini, small diced BLANCHED potatoes, kale, okra, etc can work. I am not really sure carrots or celery would though. We've never tried.

Meatza
Any mix of chopped, cooked meat (sausage, bacon, burger, etc)
Any amount of shredded cheese to put down a bull moose

Pizza
Chopped pepperoni (no need to cook)
mushrooms
black olives
onions
mozzy shreds
top with a spoon full of sauce
anything you'd normally put on top of pizza. Except pineapple. That's sacrilege.

Bagels and Lox
Reduce milk by 1/2, add in cream cheese
1-2 cans drained pink salmon OR leftover cooked salmon
1T or more of Everything Bagel Spice Mix

Oriental
Replace a small amount of the added milk with soy sauce and sesame oil
Chopped scallions
Mushroom
Chopped bamboo shoots
Leftover fried rice
Leftover take out you had the night before

Whachoomakin

This one is the most difficult of them all, cause it counts on YOU putting in whatever would make YOU happy!

Okay, so I worry that this might be a little out of everyone's depth since these are Japanese/Chinese recipes (I'm Taiwanese by ethnicity, so China except got occupied by Japan for a while) but they really are quite delicious so I hope you guys try them.

Gyudon (Japanese Beef Bowl)
Szechuan Zha Jiang Mian (Szechuanese Mixed Sauce Noodles)
Tamago Gohan (Raw egg mixed with hot rice)
Shoyuzuke Egg Yolk (Raw, marinated egg yolk)

I also have some Salted Duck Eggs (a very traditional way to deal with a lot of eggs) in the fridge but it'll be another two weeks before it'll be ready to eat so I don't have the recipe written down yet. Basically after you wash the eggs, you use a high alcohol content white rice wine or Vodka (Chinese people will use Biajiu), rinse it in the alcohol, then cake in salt. Wrap in cling wrap or keep in a jar in the fridge for a month. Then use in whatever recipes call for it.

I don't have ducks so I get my duck eggs from another lady anyway grabbed some super fresh duck eggs for this one and man is it fantastic ! Duck egg cake and I used fresh picked Rosemary so the flavor and smell was out of this world . Next time I'm going to pick some lavendar to throw in next time instead of Rosemary . Fantastic recipe

SCRAMBLED EGGS WITH WILD GARLIC.
Serves 2 People
Ingredients:
3 large eggs(chicken's eggs).
A handful of freshly picked wild garlic.
Knob of butter or margarine.
A pinch of salt.
A pinch of pepper.
Brown sauce.
Toast 2/3.
Big Splash of Milk .
Method:
Crack eggs in to a small basin and whisk together, add salt, pepper, and milk whisk thoroughly set aside.
Get a saucepan and heat some butter (or margarine)on a low heat wait until sizzling then pour eggs in to the saucepan continue stirring constantly.
Meanwhile put some toast under the grill or in a toaster brown on both sides.
Butter and keep warm.
By now the eggs should be ready.
Spread on the toast.
Chop the garlic up and sprinkle on the toast squirt brown sauce on to the plate next to the toast ENJOY!
