If you can keep roosters, then keep it. If you can't, you will have to re-home it.
Favorelles are typically very gentle birds, so a rooster may remain very sweet. Be prepared though that even calm roosters are still roosters and this sweet little boy can change quite a bit once those male hormones kick in. He may become not so sweet.
It is promising that his temperament seems generally good at this point. I've had stinkers from the moment they hatched that were clearly destined to the meat pot.
