Favorite dish featuring tomato's?

Lasagna for sure. Usually canned tomatoes though. I don't like fresh tomatoes.

This is a great way ! My 80 yr old neighbor lady taught me this, wash them, throw them in a zip lock and freeze them. Then when you make chili or soup throw them in forzen, and the skins come off on their own and float in the pot and you can dip them out !

I have two favorites for Tomatoes.

Tomato Parmisan
slice off ends of tomato and then slice in half....set out on a baking tray
in a bowl melt a stick of butter and add about a cup of breadcrumbs.
Add 2 cups of Parmisan and mix well.
Spread even amount of mix on top of each tomato and bake @ 350 for 20 mins.

Stuffed tomato
Hold tomato in left hand and with a sharp knife make cuts like this /\\/\\/\\/\\/\\ all around the top 1/3 of tomato remove top and then scoop out some of the pulp (which you can reserve for sauce to avoid wastage)
Fill each tomato with grated cheese and cooked bacon and Bake @350 for 20-25 mins.
 
Simply cutting tomatoes in have drizzling with olive oil and sprinkling with shredded basil, salt & pepper, then slow roasting in the oven about 250-300 degrees for 4 hours makes for a wonderful roasted tomato.

I cut off the ends and throw them in blender. Cook on low until the sauce is as thick as you like. Cool and put into zip lock freezer bags. Use the tomato sauce all winter for spaghetti, pizza, lasagna, vegetable soup or whatever you use the sauce for. The ends I feed to the chickens. No waste. My husband doesn't like chunks of tomatoes in his sauce.

My garden is pitiful this year, but I bought a 1/2 bushel of canning tomatoes.
Usually I just freeze them cored & halved in freezer bags then thaw later for sauce, etc.
I put up 5qts this way but still had a lot of tomatoes to work with.
So I packed my 7qt crockpot, let it go on Low for 12h then switched to High, set the lid so that liquid would evaporate and let it continue overnight.
This morning I have about a gallon of lovely thick sauce that will go into freezer bags.
Mmmmmmmmm : 9 homemade sauce in January!
