I had a 2 gal glass jar but it was too unwieldy for me for clean out, and I finally cracked it. Using a 1 gal jar now. Your flock size will matter too, I have 10 birds so a 1 gal is an ok size (1.5 would probably be optimal).
You don't need to use so much water BTW. I never strain out water because I only add enough to get the process working, so the resulting feed is like very thick oatmeal, stiff enough to hold a spoon upright. Once I run low I just add more feed & water to the same jar, and any leftover ferment from previous batch kickstarts the next.
