Fertilized eggs turned to liquid. Why?

my Muscovy had a clutch of... 19ish eggs. I candled them every two weeks removing duds and such. However every so often there would be one that became liquid. Eventually all of them had to be removed for this reason. Is this just a thing that sometimes happened during the summer? I live in the Mojave desert. Or is this an indicator of a different issue?
 
I think it happens when they turn the eggs too often. Especially when they don’t have good nest material. This seems to happen to mine when they kick out all the bedding, then they roll roll roll the eggs too much. :hu
