Are you sure his weight is correct? That sounds awfully light, or was he bottle-fed?

so if this year's cow critter the farmer is holding for us is over 1,000 lbs so far, and June is the slaughter date, then we are getting some 550 to 600 pounds of beef? I know there's more loss going from hanging weight to packages. But, this year we're asking for everything we can think of. Bones cut for stock. Tail cut for soup. Fat in 10 lb packs for projects. Liver, heart, tongue, sweetbreads. Can anyone think of anything else to use? Besides getting a second freezer. Thanks!
