First Attempt at Goat Cheese (PIX)

My neighbor took this photo of a cheese I made yesterday. It was a torte with finely crushed walnuts, and date layers.
It was to die for!!

She had it for breakfast with some wonderful cold Plum Soup. (It is still in the 90's here!)

We have Lamanchas and Alpines. We make yogurt and greek yogurt and my GF made soft cheese last week. The left over whey and what millk we don't drink goes to the birds! They love it!

The torte recipe is at the end of the recipe instructions

I add a bit of heavy whipping cream, because I do it in the Vitamix and need the extra moisture to get it blended.

I use small loaf pans, covered inside with Saran Wrap.

This week when I made cheese, I tried using some herb combinations a friend of mine gave me as a thank you gift for watching her cats while they were out of town.

This one has a Lemon Rosemary herb combination, with pretty red pepper corns.

Here it is all set up with crackers for "Nosh"

To make a herb covering on the outside of the cheese, I spray the Saran Wrap with Pam and sprinkle liberally a herb combination.
Then put in half the cheese, and again add a liberal amount of herb combination, add the rest of the cheese, put on more herbs, then cover and refrigerate.

You are limited only by your imagination on the different kinds of fillings and number of layers you want to use in each torte.
