Organic footing in your run (shavings, hay, straw, mulch, woodchips, etc) hold moisture like a sponge and can cause odor issues (although not so much a problem with the coarser ones like big woodchips), AND they will eventually decompose into horrible sucking stinking wet mud unless you shovel 'em out and replace 'em before it goes too far.
Inorganic footing (sand, gravel, or a mix thereof) doesn't, neither thing. You may eventually have to top it up as it blows or washes away a teeny bit at a time, but otherwise you do not have to replace it and it does not encourage wetness and stink.
