Cyborg,how long does the chicken keep after you can them?


Depends on who you ask. USDA says one year. Real life is at least 3 or 4 years. I have heard of some people eating at 10 years, and say its fine. I wouldn't go that far though.
If the jar is sealed properly, and STORED properly, (cool and dark) its just about indefinite, but after a few years, vitamins will start breaking down. I have several cases of jars I canned back around February 2014 that still taste great, mostly I use them to make chicken salad sandwiches with my infamous homemade onion mayo.

The big advantage to canning vs freezing will become obvious if your electricity goes out!

any idea what strain/hatchery they were? how were you feeding them? the first strain I got from mt healthhy hatchery arrived on the week side, lost half within 3 days and then no problems. by slaughter at 6.5 weeks my first run of all cockerals were 4.5-5 lbs dressed. i fed them 12 hours on 12 hours off, 18% protein.
We just got them from Tractor Supply. We gave them food at night and took it away during the day.
 
SUPER EASY HOME MADE ONION MAYO

You will need an immersion blender (stick blender), a one quart wide mouth mason jar, eggs, oil, salt, dried minced onion, and lemon juice.

2 large eggs, it is important that they are at room temperature.

2 level tablespoons bottled lemon juice.

1 level teaspoon salt (or more or less to taste).

2 cups oil of your choice, if you use olive oil, make sure it is not virgin!

3 heaping tablespoons dried minced onion.

First, drop your room temperature eggs in the jar, then add lemon juice and salt. Let it rest a minute, the egg whites will start to turn cloudy white. Add oil and minced onion. Put the head of the blender on the bottom of the jar, and turn it on, leaving it at the bottom of the jar for 5-10 seconds, until you see the creamy mayonnaise starting to form. Then pump the blender up and down for 20-30 seconds to blend thoroughly. Refrigerate.

This stuff is to die for, and much cheaper than the store stuff.

how long does it keep in the frig? I know most families eat it right up, but I do not use that much. A store jar lasts a couple of months. I could make half :)
