First time buying brussels sprouts "on the hoof" - anyone used the stems for slaw?

A local farmer is selling brussels sprouts on the stem. I bought a stem since I like for local farmers to make money, and it looked really fascinating. And yes, I like them.

Got it home before I realized there is no way to fit the thing into the frij. Since nights are about refrigerator temperature, I hung it in a bag out on the porch. That works!

And oh, my, those sprouts are so fresh and tasty! Have had them at two meals today.

Thinking the stem is probably good for shredding into slaw.

Anyone here done that?

Curious to see the replies. My mother's motto was, "Waste not, want not." She used/canned everything, but she threw away the brussel sprout stems. Curious to see if someone uses them. My gut says that they would be too woody for use, but I really don't know.

I have used broccoli stems for slaw, and this is a cousin, but it does seem pretty woody looking. I will poke around with it tomorrow. It is fun plucking the little sprouts off.

I always buy sprouts this way as they are just so tasty straight off the stem. I can't say I have eaten or used the stem as I think it would be too woody and difficult to chew through. It does not get wasted though, I tie the stem up in the chicken run for the birds. It keeps them entertained as it swings about. They love picking the pieces off it. They don't seem to get through the stem though
