I’ve now done two rounds with Miss Lydia’s suggestion. So far the adults won’t touch it, given the choice, but the ducklings (who far outnumber the older ones, sorry suckas) gobble every last bit up! I’m going to attempt a slow but firmer transition for the older ones, and try swapping food bowls so that the fermented stuff goes into their regular bowl, and the dry pellets into the secondary bowl.

This little trick worked for switching my picky cat to a BARF diet. If I can swap her, I can probably talk a dragon out of its hoard.
