For those of us who can't make soup...

This was really good!!! I just winged it:

3/4 ring of smoked sausage or kielbasa, sliced and quartered

Saute in a 3 qt pot with:

(I threw this all in the food processor because I'm lazy):

one large onion
one stalk celery
two handfuls baby carrots

Chop and add to pot. Add a little olive oil and saute til tender, roughly 15 minutes or until you remember to check them

Add two cans of chicken broth (I used low sodium) and 4 medium sized potatoes, peeled and diced.

Add 1/8 teaspoon cayenne pepper (more or less to taste), fresh ground pepper, fresh thyme, parsley and a bayleaf. Bring to a boil and simmer for 45 minutes or until potatoes are done. I mashed a few up against the side of the pot to thicken slightly. And garlic!!! I crushed a clove and chopped it in little pieces.

Ladle into bowl and add shredded cheddar cheese and a dollop of sour cream.

First soup I ever made with taste!!! The cheese and sour cream helped and it was really good!!!

You're welcome! I've never made a soup with taste (usually try chicken soup) but this was very simple and actually good! Ready in an hour.
