For those who Hatch LOTS of chicks, What then???

I now own two HB Genesis, but haven't hatched much yet. I'm planning to sell some eggs for hatching, some for eating, hatch a bunch to sell (I'll contact my local feed store and see if he's interested in getting them from me instead of a hatchery, the rest I'll list on classifieds and a sign in my front yard), I have a few breeds I plan to raise for breeding, specifically, so some of the chicks will be raised to point of lay so I can pick the best breeders, then the extras will be sold. I also eat the extra roos. I have quail in the bator now too, and plan to do the same with them, eggs to each, eggs to hatch, hatch some to sell....and we'll see if I decide after a full season if I just want to sell off the entire flock and call it good, or continue on. I never intended to get quail, but I'm open to new things.

I also want to get turkey poults next spring to start some heritage turkeys for hatching, raising and selling...and of course, eating!
