About the red worms, check the internet. I once saw a teacher who kept a "worm farm" in her classroom. The kids dropped in leftovers from their lunches and periodically the teacher had to add eggs shells, but the cool thing was there was no smell, and the worms turned the garbage into soil. She just used a styrofoam cooler with a vent tube. I bet you could find plans on the internet.

I once had a worm farm and it didn't smell. The bedding was shredded cardboard and cornmeal for feed.
I don't encourage my chickens to eat the worms in the yard because they can contain parasitic worms.
